Ingredients: 8 ounces angel hair pasta cooked according to package directions; 1 14-ounce can butter beans, drained; 4 tablespoons butter; 4 tablespoons flour; 2 cups vegetable stock, divided; 1 large tomatoes, sliced; 1 medium onion, thinly slice; 1 bay leaf; salt and pepper to taste; parsley to garnish, optional

Angel Hair in Butter Bean Sauce is a favorite vegetarian dish of mine. Creamy butter beans, fresh tomatoes and onions go great over pasta. A quick easy meal that you can make in under 30 minutes.
