Ingredients: 6 (5 oz.) Snapper Fillets; ½ Red Pepper, finely diced; ½ Jalapeno Pepper, finely diced (seeds and ribs removed); 1 ripe Mango, cut into small dice; ½ fresh Pineapple, cut into tidbits; 1 Green Onion, slit down the middle and sliced thinly; 3 tsp. Salt; 3 tsp. Pepper; 1 ½ lb. Wright Bacon, cooked crisp and cut into 1-2 inch pieces; ½ Cup Olive Oil; ¼ Cup Cider Vinegar; 1 Tbsp. Dijon Mustard; 3 Cloves Garlic, grated; 2 tsp. Dry Thyme; Splash of Champagne (optional); 5 strips Bacon, sliced horizontally; 3 tsp. Jerk Seasoning; 1 tsp. fresh Lemon Juice; 1 large Lemon (for vinaigrette); 6 semi circle double folds of parchment paper; 1 Smoked Ham Hock; ½ Cup Water; 1 Sprig fresh Thyme; Small bunch fresh chopped cilantro
