Martine Fusco's The Contento Egg Sandwich

Name: The Contento Egg Sandwich
Ingredients: 1 egg yolk; 1 Tbsp. lemon juice; ¼ tsp. salt; 2 roasted garlic cloves; ¼ Cup coarsely chopped basil; ½ Cup oil; 9 slices of Wright bacon; 2 Tbsp. butter, softened; 1 tsp. sambal oelek; 6 kaiser rolls, split; 6 large Happy eggs; ½ – 1 Cup olive oil; ¼ tsp. salt; ½ tsp. freshly ground pepper; ¼ Cup parmesan cheese, freshly grated; ¼ Cup pecorino toscano, freshly grated; ½ Cup finely chopped tomatoes; 1 Cup arugula microgreens

These Italian inspired egg sandwiches are layered with olive oil poached eggs, basil aioli, pecorino toscano and parmesan cheese, fresh tomato bits and micro greens. The rolls are toasted with a spicy combination of butter and chili paste for a Happy egg sandwich.
