Ingredients: 7 cuts of filet mignon; kosher Salt – season to taste; coarse ground black pepper – season to taste; clarified butter – approx. 4 oz per skillet; fresh garlic – 10 cloves; butter – 2 sticks (1 cup); shiitake mushrooms (finely chopped) – 6; blue oyster mushrooms (finely chopped) – 9 Tbsp; Momiki black garlic umami sauce – 8 tsp; beef stock – 1/4 cup; creme fraiche – 3/4 cup; heavy cream – 3 3/4 cup; dry red chili flakes – 3/4 tsp; white truffle (shaved) – season to taste; yellow corn grits – 2 cups; milk – 3 cups; cheddar cheese (shredded) – 1.5 cups; sea salt – season to taste; brussels sprouts – 2 lbs; bacon – 12 oz; raspberries – 1 cup; walnuts (chopped) – approx. 1/2 cup; blues hog raspberry chipotle sauce – 4 Tbsp; feta cheese (crumbled) – add to desired consistency or to taste bacon grease – approx. 2 Tbsp or as needed
